Being asked to be a part of Bite of Seattle this year was an honor and privilege that our entire team was excited about. Of course, we had to put our spin on things ensuring that we left the “Mexico” mark on all those guests and audiences.
We had the pleasure of having a booth in “The Alley”, which benefited Food Lifeline, and served over 7,000 guests in 2 days – all the while wanting to give each person an exceptional experience, even if it was a few seconds. We served our delectable Mexican Caprese – a fresh, thick Roma tomato slice topped with a cool avocado mousse, queso fresco and a blood-orange balsamic glaze. Guests loved this option on such a hot day and came back for more the next day! This was such a hit, we added it to our new menu in the restaurant – so come on in and try it!
In addition to the “Alley”, Chef Sergio and Managing Partner Jesika, were asked to do the live cooking segment all 3 days with ‘The Chef in the Hat ‘- Chef Thierry. Instead of the single dish we were asked to prepare live in 30 minutes, we decided to take an extra step and showing the audience how they can prepare a healthy and delicious meal in 30 minutes. With Jesika’s assistance – Chef Sergio made our Guacamole Clásico with plantain chips, Mexican Chop Salad with 11 ingredients and our Pescado Veracruz made with fresh caught Alaskan Halibut. Everyone enjoyed learning the recipes and to make it more interactive we asked questions about Veracruz cooking and gave out prizes- including 4 course tequila tastings.
We are so glad to have seen so many familiar faces from the Bite! In our restaurant and look forward to participating next year!
